One of our favourite things for healthy cooking is our barbecue baskets and flat grilling pans used for making sweet roasted vegetables and stir-fries. You can pick up a wide range of shapes and sizes at barbecue and speciality kitchen stores (most are stainless steel and have small holes to allow grilled flavour to build in your food while not having small pieces of food lost in your barbecue).
To prepare grilled vegetables, simply drizzle or brush a bit of oil on your favorite vegetables and sprinkle with salt and pepper or an enjoyable spice blend. Place on the grill and stir-fry until slightly soft and browned. Try asparagus, green beans, thick slices of portabello mushrooms, quartered red peppers, long slices of zucchini, round slices of eggplant and whole cherry tomatoes. Also try stir-fried shrimp, grilled scallops, fish fillets, beef/chicken fajitas and more.
