Super Food: SPINACH

Deep green leafy vegetables such as spinach are good sources of beta carotene, fibre, iron, vitamin C, and vitamin K. They also contain folic acid, which is a B-vitamin which reduces the risk of heart disease and neural tube defects (spinal complications in a developing fetus). Spinach is also a great source of lutein, which is a phytochemical that prevents or slows macular degeneration which is a leading cause of blindness in the elderly.
