From Couch Potato to Wellness Whiz

Read this powerful letter from a client that will inspire YOU on your journey to better health.

I used to be you.  You know who you are.  That person who sits on the couch eating or drinking while watching the infomercials on fitness gear.  That person who watches the TV shows that have people lose tremendous amounts.  That person that thinks how come I can’t do that.  How come I can’t exercise like that, eat like that and lose weight.  I don’t have the time, I don’t have the knowledge, I don’t have the energy.

You know what,  you are wrong.  I used to be that person until I realized I got where I did health wise, because of choices I made.  Choices to eat the hot wings, the chips, drink the beer and sit on the couch.  When I finally took responsibility that I got myself into this mess, I realized I was the only one who could get myself out of it.  The change didn’t happen over night.  I tried all of the diets, all of the exercise programs, only to get on the band wagon for a short period of time and then find any excuse I could to quit;  I was too busy, or there is a special occasion to celebrate.  Until I finally came to the realization there are no excuses and it was all crap, I wasn’t able to make the changes I needed to.

So you are probably wondering what I did.  Well, I first started working with a trainer.  I thought, okay if I pay someone, I’ll make sure I will stick to my workouts.  Well, I did indeed do that.  But I wasn’t seeing the results I thought I should, only to once again look inside myself and take responsibility for my nutrition and fess us that I can work out, but if I don’t change my eating habits, I’m paying a trainer to maintain an already unhealthy weight.

Next stop, Andrea Holwegner and Health Stand Nutrition.  I was skeptical at first initially thinking what is she going to tell me that I don’t already know.  (and trust me, I’ve read so many articles, books, etc. I thought I knew it all).  But I didn’t and Andrea began transforming how I thought about food and making me look at my relationship with food.  It wasn’t about going on a diet for the rest of my life, it was about changing my eating habits to support a healthy life and realizing, I don’t have to give up all of the things I thought I would, I just needed to change my volume of consuming those things.

Now the pieces started coming together.  I began to notice small changes in how I was feeling.  I started to notice how tasty a healthy meal was and that I wasn’t feeling hungry shortly after.  And like so many things in life, once you start seeing results, feeling better, your mind set starts to change and you want to continue to succeed.  You want to continue to support yourself.  The gratification of success really starts to become far more important than consuming all of those unhealthy things.

I’m not out of the woods yet, but I can tell you every day I succeed, makes my choices easier and easier.  It’s like reading a book that you may not be crazy about at first, but the longer you stick with it, the more you are determined to keep reading and then the bonus is realizing you actually are enjoying the story.  Everyday presents new challenges for me.  People bringing in baking at work, watching hockey games with friends, going out to celebrate special occasions, but what I can understand now, it’s not the food and the drink that make the event special, it’s the mindset I have and enjoying the moment with people  that makes the event special.

I wish you the best on your journey to good health.  You’ve heard this so many times from so many people, if I can do it, anyone can do it.  Why not become the person who says that to others, rather than being the receiver of the message.

Kim

Feature Recipe

Breaded Cajun Style Fish

Adults and kids will love this mild crunchy fish. Serve with a salad, steamed green beans or asparagus and rice for a balanced meal.

Makes 4 servings

What You Need:

  • 400 g fresh or frozen light white fish (approximately 2-4 basa or tilapia fillets)
  • ½ cup milk
  • 1 cup bread crumbs
  • 2 tsp. Cajun seasoning
  • Cayenne pepper to taste (optional if you like it hot!)
  • 1 tbsp. fresh parsley (or 1 tsp dried parsley)
  • Fresh ground pepper to taste
  • 1 tbsp. vegetable oil
  • Fresh Lemon wedges (optional)

How You Prepare:

  1. Pour milk into a shallow dish.
  2. Pour bread crumbs into a separate second shallow dish and add Cajun seasoning, cayenne pepper (optional), parsley and fresh ground pepper.
  3. Heat vegetable oil over medium heat in a non-stick pan.
  4. Dip both sides of the fish fillet into milk mixture and then into breadcrumb mixture.
  5. Pan-fry fish 3-5 minutes on each side until the bread crumb coating becomes slightly golden coloured and fish flakes easily when cut.
  6. Serve with optional lemon quarters on the side.

Variations:

  • If your kids like fish fingers prepare this recipe but cut the fish into fingers instead. You can pan fry or alternatively bake on a greased rimmed baking sheet, turning once, for about 15 minutes or until golden color and fish flakes easily when cut.
  • If you like breaded fish and want some variation try replacing the Cajun seasoning with dried oregano, basil, garlic powder or your other favourite herbs and spices.
