Frozen Carrot Cake California Prunes Squares
Sweet and nutritious dessert option the whole family will love

What You Need:
- 1 cup California Prunes (about 24 prunes)
- 2 medium carrots, grated
- 1 cup cashew butter
- 1 cup unsweetened shredded coconut
- 2 tbsp honey
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ginger
- Optional: Shredded coconut for topping
How to Make the Frozen Carrot Cake California Prunes Squares:
- Line a 9×9 inch baking pan with parchment paper.
- In a food processor or high-power blender, combine prunes, carrots, cashew butter, coconut, honey, cinnamon, nutmeg and ginger.
- Blend to paste consistency.
- Spoon mixture into baking pan and press down until even and compact.
- Sprinkle with coconut (optional) and freeze 2 hours.
- Cut into 24 squares and enjoy.
- Store in freezer.
