Chicken & California Prune Kebabs with Peanut Sauce Recipe on a blue plate

These colourful kebabs are perfect for any occasion. And if you have never barbequed California Prunes before, you’re in for a treat! The heat releases their sweetness and provides spectacular flavour. Plus, prunes have a low glycemic index, so this high protein meal will keep blood sugar levels stable. Enjoy with extra peanut sauce for dipping.

Makes 12 skewers

What You Need

Chicken

  • 1 lb skinless, boneless chicken thighs or breasts, cut into chunks
  • 1 cup California Prunes
  • 2 red peppers, seeded and cut into 1-inch squares
  • 2 zucchini, cut into ¼-inch slices
  • ¼ cup dry-roasted peanuts
  • ½ cup fresh cilantro leaves

Peanut sauce

  • ¾ cup creamy peanut butter
  • ¼ cup rice vinegar
  • ⅓ cup reduced sodium tamari or soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fresh grated ginger
  • 1 clove garlic, finely minced
  • Juice from one lime

How To Make Chicken & California Prunes Kebab

  1. Peanut sauce: In a small bowl, whisk together peanut butter, vinegar, tamari, sugar, ginger, garlic and lime juice until well-blended. Transfer half of the sauce to a resealable bag to use as marinade. Reserve remaining marinade in a separate sealed container.
  2. Add the chicken, prunes, red pepper and zucchini to the resealable marinade bag. Massage to coat. Refrigerate one hour or longer.
  3. Preheat grill to medium.
  4. Thread marinated chicken, prunes and vegetables on to skewers until they are all used up. Discard remaining marinade. Barbeque about 20-25 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
  5. Serve drizzled with reserved marinade from sealed container, peanuts and cilantro.
