Fast, easy meals – Chili lime salmon
I am admittedly, a food lover and a lazy cook all in one.
Also, I am not a huge salmon fan… or at least I wasn’t until I discovered chili lime salmon! I cannot take credit for
the recipe, it was a hand me down from a friend!
My day typically results in me getting home around 7pm, after the gym and I am hungry!
While I always cook ahead for my lunches and snacks for the week, for supper I try to cook at home when I can. That being said, I need easy, fast meals that can feed my hunger.
The other bonus about this salmon, is it helps me get in my 2 or more servings of fatty fish for the week!
Recently, I have been having my chili salmon with boiled baby potatoes and a large salad full of all the vegetables in my fridge and some berries.
Recipe (which is really just a simple guide)
Salmon filets – spread evenly on a baking sheet.
Top with a squeeze of lime juice and chili powder (amount to preference), salt and pepper.
Pre-heat oven to 400 F
Bake, uncovered, for 10-12 minutes.
Ready to eat!
*This also goes great with a little side of guacamole!
