Mango & Shrimp Kebabs Print
A perfect summer barbeque meal! This is delicious on a bed of scented or jasmine rice and with a tossed salad.
Makes 8 servings
What you need:
8 bamboo skewers
2 Tbsp olive oil
2 cloves chopped garlic
1 Tbsp minced fresh ginger
4 Tbsp fresh lime juice
2 Tbsp fresh minced cilantro
1/2 tsp red pepper flakes
Salt to taste
Pepper to taste
1.5 lbs large shrimp, peeled and de-veined
2 mangos (firm but ripe), cut into 1 inch pieces
1 onion, cut into 1 inch pieces
2 red peppers, cut into 1 inch pieces
How you prepare:
Soak bamboo skewers in water for 15 minutes. In the meantime, combine olive oil, garlic, ginger, lime juice, cilantro, pepper flakes, salt & pepper in a bowl. Skewer alternating pieces of mango, onion, red peppers with shrimp to make 8 skewers. Place in a flat dish large enough to lay skewers in one layer. Pour marinade over skewers, cover, and refrigerate for 15 minutes, turning half way through. Start your BBQ or grill. Grill skewers for about 4 minutes per side until shrimp is pink/opaque.
