Mercury and its biological form methylmercury (MeHg) is a potent toxin in our food supply, found almost exclusively in fish and shellfish. It is a persistent organic pollutant in the environment and accumulates in organisms that ingest it. Mercury is designated a “toxic substance” under the Canadian Environmental Protection Act (CEPA). Regulation of, and advisories about, mercury in fish are federal and provincial responsibilities.
