Our Favourite Things: My “Red List” of Favourite Foods
We are proud of our home team, The Calgary Flames, for how far they have come this year. Because of that, I thought it fitting to list some of my favourite “red-dish” foods that I enjoy. In no particular order, here is my “Red List”:
Beets: Delicious and nutritious, beets are sweet and earthy whether roasted on their own, or served in salad with steak, cherry tomatoes and goat cheese. They are rich in antioxidants, and so easy to cook. Whenever I buy them from the Farmer’s Market, I put them all in the oven with a bit of oil drizzled on top and roast them for about 1 hour and 20 minutes. Once cooled,the skin comes off easily and your beets are ready to eat or freeze and have for later! Can’t beet that!
Smoked Salmon: I am pretty lucky in this department as my dad, who lives in Halifax, sends me slabs of Nova Scotia smoked salmon a few times a year. I usually ration this precious food and store it in my deep freezer. Whenever I get a craving, I can grab a slab, slice it up and serve it with caper berries and lemon wedges with cream cheese and a baguette. Truly a favourite thing for an appie or a meal.
Homemade Buffalo Chicken Pizza: What a great combination for Finger Food Friday! Spread a bit of Ranch dressing and Frank’s Red Hot sauce over your crust, and top with cooked chicken mixed with Frank’s, sprinkle mozza, bake and enjoy! You can use leftover chicken for this pizza, and if you are in a real hurry, substitute the home-made crust with thick Greek Pita’s!
Brie Baked with craisins: This is a great appie to take over to someone’s house and catch the next game! Saute craisins, brown sugar, onion with a bit of butter, and pour over your round of brie…bake and serve with a baguette or crackers.
Red wine: And of course, everything above goes splendidly with a glass of red wine, to be enjoyed, savoured and shared with friends and loved ones.
