I love kitchen gadgets that can multi-task. My waffle iron is just that… it makes waffles, but so much more. It’s time to waffle up!
Breakfast Sandwiches: Take a slice of buttered bread and top with cooked bacon or back bacon, chopped tomato and cheese. Crack an egg on top and cover with the second buttered slice of bread. Voila, a breakfast sandwich, waffle style.
French Toast: Whisk together eggs, milk, cinnamon and vanilla. Soak bread in egg mixture and place on your greased waffle maker. Top with cottage cheese and a drizzle of maple syrup and berries for a complete breakfast.
Cuban Sandwiches: Butter the outside of a panini bread. Add sliced leftover barbecued pork, banana peppers, pickles, Monterey jack cheese and Dijon mustard. Top with the second piece of buttered bread and grill.
Hint: When making sandwiches in the waffle iron, don’t completely clip the iron shut… let the weight of the waffle iron do the work!
