Our Favourite Things: Reduced Balsamic Vinegar
One of my favourite things is ready-made balsamic vinegar reduction. Sweet, sticky balsamic reduction has a less acidic bite than regular vinegar and mimics the rich flavor of expensive balsamic vinegar. It can add substantial flavour to many foods and is something I recommend all healthy home cooks have in their kitchen to build flavor.
Although you can make it from scratch by simmering 1 cup of balsamic vinegar with 1 tbsp of honey or sugar, bottled varieties are convenient for busy people on the go. Drizzle reduced balsamic vinegar on top of fresh tomatoes and avocado, salad, or as a finishing sauce for meat, poultry and roasted veggies. My five year old son thinks this is better than ketchup and loves to dip barbecued chicken, steamed broccoli and grilled asparagus in it.
