Our Favourite Things – Refreshingly Mint
Try this very tasty drink made with my favorite fresh herb to help keep you cool on these hot summer days:
Pour lemon flavored Italian soda over a few ice cubes until your glass is about 1/3 to 1/2 full. Top up the rest with club soda. Squeeze in a lime wedge. Then add some chopped mint and don’t be skimpy. Voila!
Mint is versatile and can be used in lots of different foods. That is a good thing because it is growing very well in my garden right now. It tastes great in smoothies, in fruit salads and salsas, in a yogurt mint sauce that goes heavenly with lamb chops and steeped as a tea.
Mint contains beneficial antioxidants and anti-inflammatory agents and may calm an upset stomach. It also contains an antimicrobial agent to aid in mouth health and to keep breath fresher. It has a lot going for it and that plus its flavor is why it is one of my favorites!
