As a rule, I like making meals from scratch, but I do admit to having shortcuts. For example, this broccoli slaw mix from Superstore. It’s a super fast way to increase the vegetable intake in our home, with minimal effort. Not only does this pre-shredded mix make a tasty coleslaw, but it is easy to add in to other dishes. Made from broccoli stalks, carrots, and red cabbage, my children find this mix more tasty than a predominately cabbage-based mix. I add it into pasta dishes – it makes a great layer in lasagna! I have blended it into soups, added to stir-frys, and even used with scrambled eggs.
I will often peel and dice the stems of broccoli, or will shred cabbage, but this mix is such a great time saver for weeknight meals, and an easy way to include more vegetables in our family meals.
I love Broccoli slaw mix too! I throw a handful on top of a plain lettuce salad for extra crunch and color, and add it to homemade fish tacos.
It also makes a great side dish: I mix one bag with chopped apple, a handful of dried cranberries, a handful of chopped pecans; then add some of my favorite salad dressing for a fast side salad (at the moment my favorite bottled dressing is Ken’s Apple Cider Vinegar, but any homemade or bottled dressing will work!)
