Our Favourite things: Many uses for muffin tins!
Do you ever have leftover grains like rice or quinoa and don’t want it to go to waste?
Or do you need a quick whole grain serving to heat up for part of a meal?
One of my favourite things is to freeze whole grains in muffin tins. You can use leftover grains, or if you are able to batch cook on the weekend, it can be helpful to prepare ahead of time. Simply spray the tin with some cooking oil, pack in the grain, freeze, pop out the grain “pucks” and put them in a freezer safe Ziploc bag in the freezer. Then when you need some grain for a side or in a salad – simply reheat in the microwave.
Personally, I often freeze brown rice for my own work lunches or my sons will warm it up for part of a quick home lunch as well. For my clients, I also find this particularly useful for students or people cooking for one.

I use muffin tins to freeze 1 portion servings of leftovers – about 1/2 cup. When frozen, I pop them out of the muffin tin and store in ziplock freezer backs.
