Watermelon Feta Blackberry Salad Recipe
Healthy Summer Salad Recipe!
This healthy summer salad recipe with watermelon, feta, and blackberries is quick, delicious, and beautiful. The ingredient list portions are just a suggestion, you may prefer more feta, or more mint. We enjoyed this in our office some time ago when one of our colleagues, Psychologist Adele Fox, brought it in, and we all got a little obsessed with it!
Makes 6 servings
What you need:
- 4 cups watermlon, diced
- 2 cups fresh blackberries
- 1 cup diced feta cheese
- 4 tbsp fresh chopped mint
- fresh lime juice (optional)
How you make it:
On a large platter or shallow bowl, plate layers of watermelon, blackberries, feta cheese, and fresh mint. If using lime juice, sprinkle over all items.
