I love quinoa for many reasons, but I don’t think any of them are nutritional! I do not eat quinoa thinking to myself….”I am eating a gluten-free ancient grain with some of the essential amino acids, which are the building blocks of protein!”. I eat quinoa because it so versatile and so nutty and delicious, and it is really quick to cook. It can be used in anything from a salad, to a main meal to yes, even desserts.
Two of my favorite desserts are from the cookbook “Quinoa 365…Moist Chocolate Quinoa Cake and Quinoa Chocolate Chip Cookies”. The cookies were actually something I was skeptical about baking, but not only were they delicious, but they were kid-approved and gone in two days! For the recipe, I did not have quinoa flour, so just blended up the quinoa in my magic bullet. The texture had a slight nutty-crunch, but the cookies were still soft, chewy and so yummy. The fact that quinoa is healthy is just a bonus!
