Zuppa Toscana Soup Recipe
Hearty Tuscan soup to warm up your soul
I’ve been making this zuppa toscana soup for many years as a simple weekday fall soup when my Swiss chard is abundant in the garden or in the winter when you come in from outdoor activity such as skiing or skating and you want a hearty soup to warm up your soul.
Makes 4 servings
What you need
4 spicy italian sausages
6 cups low-sodium chicken broth
4 medium sized white or red potatoes (or 2 large russet potatoes), sliced into cubes
2 garlic cloves, crushed
1 medium onion, diced
1 tbsp olive oil
2 cups (or more!) of sliced Swiss chard (thinly slice stems and leaves)
1 cup 2% milk
Salt and pepper to taste
How you make zuppa toscana
1 Sauté sliced onion and minced garlic in olive oil then add sausage and cook until done (you can either squeeze sausage meat out of the casing and cook or add pre-cooked sliced sausage).
2 Add chicken broth and diced potatoes and cook until potatoes are tender.
3 Season with salt and pepper and add sliced Swiss chard and milk then cook a few minutes until chard stems are soft.
4 Serve immediately and enjoy with love and conversation around the table with your family.
