Vegetarian Baked Beans Recipe
A speedy plant-based, fiber-rich side everyone will enjoy!

Struggling to find a tasty way to incorporate more beans into your diet? This recipe takes regular baked beans and elevates them to a delicious and tasty vegetarian side. Beans are an excellent source of protein, fibre, and other nutrients such as iron and magnesium. This recipe is sure to be a family favourite!
Makes 6-8 servings
What You Need
- 1 small onion, diced
- 1 green bell pepper, diced small
- 2 garlic cloves, minced
- 1 jalapeno, seeded and minced
- 1 tablespoon smoked paprika
- ½ teaspoon chipotle chili powder (or regular chili powder)
- 4 x 14 oz (398 ml) cans of baked beans in tomato sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons ketchup
- 2 tablespoon Dijon mustard
- Salt and Pepper, to taste
How To Make Vegetarian Baked Beans
- Preheat oven to 375 degrees Fahrenheit
- Add 1 tbsp of oil to a large pot. Add onion and cook for ~5 minutes until translucent.
- Add garlic and jalapeno. Cook for ~2-3 minutes. Add bell pepper and cook for an additional 3-5 minutes. Add smoked paprika and chipotle powder stir and combine with other ingredients.
- Add in 4 cans of baked beans. Stir to combine. Add in apple cider vinegar, ketchup, and Dijon mustard.
- Bring to a boil. Add salt and pepper to taste.
- If needed, transfer baked beans to an oven-safe dish. Bake for 35-40 min, covered.

Enjoy topped on a baked sweet potato, as a side served with veggie/tofu kabobs, or served on a bun with a side salad for a quick weeknight meal. If the beans are not polished off they can be frozen and enjoyed at a later date!
