Cranberry, Broccoli and Toasted Almond Salad Recipe

This quick and easy salad is a simple add on to a meal, and travels well for a potluck dish, or a holiday meal.

Ingredients:Broccoli Salad Recipe

  • 4 cups bite sized broccoli pieces
  • 1/4 cup thinly sliced onion (red is delicious)
  • 1/2 cup of dried cranberries
  • 1/2 cup chopped, toasted almonds (or sub pumpkin seeds)

For dressing:

  • 1/2 cup plain yogurt
  • 1/4 cup mayonaise
  • juice of half a lemon (about 2 Tbsp)
  • 2 tsp sugar
  • 1 Tbsp chopped fresh dill (or 1 tsp dried)
  • fresh ground pepper

Pour dressing over salad, and eat right away, or let marinate for a couple of hours in fridge. Makes 8 servings
