Frozen Carrot Cake California Prunes Squares

This sweet snack blends traditional carrot cake spices like ginger, cinnamon and nutmeg into delectable, nutritious squares. Each nutty piece is packed with nutritious whole foods such as California Prunes, cashew butter, coconut and carrots. They are perfect right out of the freezer for snacks or dessert!
 
Makes 24 squares

What You Need:

  • 1 cup California Prunes (about 24 prunes)
  • 2 medium carrots, grated
  • 1 cup cashew butter
  • 1 cup unsweetened shredded coconut
  • 2 tbsp honey
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • Optional: Shredded coconut for topping

How to Make the Frozen Carrot Cake California Prunes Squares:

  1. Line a 9×9 inch baking pan with parchment paper.
  2. In a food processor or high-power blender, combine prunes, carrots, cashew butter, coconut, honey, cinnamon, nutmeg and ginger.
  3. Blend to paste consistency.
  4. Spoon mixture into baking pan and press down until even and compact.
  5. Sprinkle with coconut (optional) and freeze 2 hours.
  6. Cut into 24 squares and enjoy.
  7. Store in freezer.
