Try Our Healthy Bran Muffin Recipe With Berries

This bran berry muffin recipe is packed with whole grain ingredients, fibre and antioxidants.  Try baking a double batch and tossing them in the freezer for lunch packing, snacks or enjoy them for breakfast with some fruit and yogurt.  

Recipe for Bran Berry Muffins

Makes 12 servings

What you need:

1 egg
2/3 cup buttermilk (or use yogurt or sour milk by adding a spoon of vinegar to milk)
1/4 cup vegetable oil
3/4 cup whole wheat flour
3/4 cup natural bran
1/2 cup wheat germ
3/4 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp grated orange rind/zest
1 cup fresh or frozen berries (such as blueberries, raspberries or cranberries)

How you prepare:

  1. Beat egg with buttermilk and oil.
  2. Mix in dry ingredients until just moistened (do not over stir) and then fold in orange rind and berries.
  3. Fill muffins cups 3/4 full.
  4. Bake at 400 degrees F for about 15 to 20 minutes.
