Bran Berry Muffin Recipe
Try Our Healthy Bran Muffin Recipe With Berries
This bran berry muffin recipe is packed with whole grain ingredients, fibre and antioxidants. Try baking a double batch and tossing them in the freezer for lunch packing, snacks or enjoy them for breakfast with some fruit and yogurt.
Makes 12 servings
What you need:
1 egg
2/3 cup buttermilk (or use yogurt or sour milk by adding a spoon of vinegar to milk)
1/4 cup vegetable oil
3/4 cup whole wheat flour
3/4 cup natural bran
1/2 cup wheat germ
3/4 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp grated orange rind/zest
1 cup fresh or frozen berries (such as blueberries, raspberries or cranberries)
How you prepare:
- Beat egg with buttermilk and oil.
- Mix in dry ingredients until just moistened (do not over stir) and then fold in orange rind and berries.
- Fill muffins cups 3/4 full.
- Bake at 400 degrees F for about 15 to 20 minutes.
