Crunchy Sea Salt and Thyme Roasted Lentils

Time: 20 minutes
- 2 cups cooked brown or green lentils lentils
- 2 tbsp olive oil
- 2 tsp sea salt
- 2 tbsp fresh thyme
- Preheat the oven to 425 degrees.
- Combine all ingredients in a bowl and toss until all lentils are coated in oil
- Spread the mixture on a sheet pan and bake for 15-20 minutes, stirring once half way through, until crispy.
