Healthy Summer Fish Recipe for the Grill!
This is a simple fresh recipe that is perfect for a summer barbecue! Serve with a large tossed green salad and whole grain garlic toast or rice to complete the meal.
Makes 4 servings
What You Need:
4 red snapper fish fillets (about 5 ounces each) or any other light white fish
1 large mango, peeled, cut into thick wedges
4 Tbsp olive oil
4 Tbsp chopped fresh cilantro
3 Tbsp fresh squeezed lime juice
1-1/2 tsp grated lime peel (zest)
Salt and pepper to taste
How You Prepare:
In a small bowl mix the olive oil, cilantro, lime juice and lime zest to make the vinaigrette. Brush all sides of the fish fillets with the vinaigrette. Sprinkle fish fillets with salt and pepper to taste. Grill fish on a medium heated barbecue on a grill pan (or place in tinfoil and cook until fish is opaque and done. For the mango you have the choice to brush the mango with vinaigrette and grill until grill lines appear (or alternatively simply dice fresh mango and serve as a salsa on top of the fish). Serve with more fresh chopped cilantro and a squeeze of fresh lime.
