Kale Walnut Pesto Recipe
This is a flavorful variation of pesto from Registered Dietitian Sherene Sieben that works great as a marinade for shrimp, fish, chicken or as a topping for pasta, pizza and more!
Kale Walnut Pesto
Makes 8 servings
What you need:
- 1/2 cup olive oil
- 3 garlic cloves, minced
- 1 cup fresh basil
- 1 cup curly kale
- 1/4 cup walnuts
- 1/2 cup fresh grated parmesan cheese
How you prepare:
Place the olive oil, garlic, basil, kale and walnuts into a food processor or high-quality blender. Stir I the grated parmesan cheese.
It can be used as a dip for fresh bread or crackers, a condiment for a cheese and meat tray, a marinade for shrimp, fish, chicken, or on its own as a pasta sauce
