Oven Roasted Tomatoes
Garden tomatoes have such amazing flavour, but sometimes, we end up with many more than we can use. Or maybe you are like some of our staff members at Health Stand Nutrition, and you like to purchase a couple of large boxes of tomatoes at the farmer’s market this time of year.
Consider oven roasting tomatoes to add to your favourite sauce recipes, or freezing for keeping that flavour in your dishes all year. It’s simple to do, and doesn’t take a lot of time.
Slice tomatoes in half, and toss with olive oil. Place on a parchment lined baking sheet, and add diced garlic. You can then add your favourite seasonings – such as dried or fresh thyme, Italian seasoning, or rosemary. Then add salt and pepper. Roast at 350 for about an hour, up to 2 hours for a darker carmelization.
Once roasted, you can dice them into your favourite recipes, puree them into sauce, or freeze in bags for up to 6 months. Delicious!
