Panko Crusted Salmon
A simple baked salmon with the right mix of sweet, savory and crunch! Serve with rice and steamed green beans.
Makes 4 servings
What you need:
24 ounces (720 grams) salmon fillet
3 tbsp butter/non-hydrogenated margarine, melted
3 tbsp. grainy mustard or dijon mustard
3 tbsp. honey
1/2 cup panko (Japanese bread crumbs)
1 tbsp. fresh chopped parsley (or 2 tsp. dried parsley)
Fresh ground pepper
Fresh lemons
How you prepare:
1. Mix butter/margarine with mustard and honey in a small bowl.
2. In another bowl mix panko bread crumbs, parsley and pepper.
3. Brush the mustard mixture over the salmon and sprinkle bread crumbs on top.
4. Top with a few slices of fresh lemon and bake salmon at 400 F for 12-15 minutes or until it flakes easy with a fork.
5. Garnish with fresh lemon wedges.
