Quick Fruit Salsas
Quick fruit salsas for chicken or fish
Fruit salsas are a fast topping for a summer barbecued chicken or fish. This is a basic recipe that allows you to quickly toss fresh ingredients together while your chicken or fish cooks.
Take the juice of one lime, add one small diced and seeded jalapeno pepper. Mix in about ½ cup of diced red onion, and ½ cup of fresh cilantro. Mix in your favourite diced fruit, such as a handful of chopped strawberries, cubed watermelon or slice up a mango or peach. You may also prefer to do a blend of several types of fruit for added color and flavor. If you have avocado on hand, this is an easy add in as well. Then add salt and pepper to taste.
This basic mixture also works for fresh tomatoes, if you prefer a more traditional salsa flavour.
A fresh salsa like this is especially delicious as a topping for fish tacos.
