Spicy White Bean and Tomato Breakfast Tacos

Ingredients
  • 2 cups (1 can) cannellini beans
  • 1 28-ounce can diced tomatoes
  • ½ tsp chili powder
  • 8 small corn tortillas
  • 4 eggs
  • 1/2 avocado

Instructions

1. In a small sauce pan, combine the beans, tomatoes and chili powder. Cook over high
heat until warm, about 5 minutes.
2. In a separate pan, scramble the eggs.
3. Warm the tortillas in the microwave or oven, then top each with the bean mixture, eggs
and 2 avocado slices.
