Gingerbread Granola Recipe
A delicious iron-rich breakfast addition perfect for the holidays but also great for any time of year!
This is hands down my absolute favourite granola of all time. I love the spice combination and richness that is added by the molasses. I love it on top of yogurt or just eaten with milk as a quick snack. The oats, molasses, and pumpkin seeds all are sources of iron which makes this granola a great option for individuals looking for an iron boost in their day. I eat this granola year-round even with the Christmas-y spice combination. Enjoy!
Makes ~ 8 cups
What You Need:
- 4 cups oats
- 1 cup sliced, blanched almonds (or other nut of your choice, pecans are also delicious)
- 1/3 cup pumpkin seeds (or sunflower seeds)
- 1/2 cup unsweetened coconut flakes
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/3 cup maple syrup
- 1/4 cup molasses
- ½ cup canola oil (or other neutral-tasting oil)
- 1 teaspoon vanilla extract
How to Make the Gingerbread Granola Recipe:
- Pre-heat oven to 350 degrees F.
- Mix the oats, nuts, pumpkin seeds, unsweetened coconut flakes, salt, cinnamon, and ginger in a large bowl until well combined.
- In a separate bowl or glass measuring cup, add the oil, maple syrup, molasses, and vanilla extract.
- Combine the dry and wet ingredients and mix until combined.
- Line a baking sheet with parchment paper. Spread the granola evenly on a baking sheet.
- Bake the granola for 15 minutes in the oven. Take it out and stir the granola. Spread it evenly again and put it in the oven for an additional 10-15 minutes until browned.
- Leave the granola to cool for 15 minutes. Note when it is initially taken out of the oven it will likely still be a bit soft but hardens as it cools.
