Seasoned Chicken Drumsticks and Greek Pasta Salad

A simple weeknight meal for the whole family  

Seasoned Chicken Drumstick and greek pasta salad recipe

This recipe is a weeknight go-to and works great as leftovers for lunch the next day. The pasta salad does double duty as both your grains and veggies for the meal.  You can even make the pasta salad earlier in the week and have it for lunch (for an extra nutrition boost you can add chickpeas or leftover chicken). The homemade seasoning for the chicken also tastes great on chicken thighs or chicken breast. If you are short on time, you can use a store bought Greek dressing for the pasta salad to throw this meal together in a pinch.  

Makes 4-5 servings 

What You Need 

Baked Seasoned Chicken Drumsticks Recipe Ingredients: 

  • 10 chicken drumsticks 
  • 1-2 tablespoons olive oil 
  • 2 teaspoons garlic powder 
  • 2 teaspoons onion powder  
  • 2 teaspoons Italian seasoning  
  • 1 teaspoon black pepper 
  • 1 teaspoon paprika   

Greek Pasta Salad Recipe Ingredients: 

  • 1/2 large cucumber diced  
  • 1/2 package of pasta or ~200 grams (such as penne, fusilli, linguine)  
  • 1 pint of cherry tomatoes, sliced 
  • 1 bell pepper, diced  
  • 1/3 cup cup olives  
  • 1/2 cup crumbled feta cheese 
  • Optional: ¼ cup of basil, torn or cut into small pieces 

Vinaigrette: 

  • 1/2 cup olive oil 
  • 3 tablespoons white wine or apple cider vinegar 
  • 1 tablespoon dijon mustard 
  • 1 teaspoon greek or Italian seasoning 
  • 1 teaspoon maple syrup or honey  
  • Salt and pepper  

      How to Make the Baked Seasoned Chicken Drumsticks and Greek Pasta Salad Recipe:

      Chicken Drumsticks: 

      1. Pre-heat oven to 400 degrees F 
      2. Mix garlic powder, onion powder, onion powder, Italian seasoning, black pepper, and paprika into a small bowl 
      3. Brush chicken drumsticks with olive oil until coated 
      4. Sprinkle seasoning evenly over chicken drumsticks. Rub it in to ensure the drumsticks are coated 
      5. Bake for 12-15 minutes (ensure they have reached an internal temperature of 165 degrees F)* 

      *Can also bake in the air fryer at 400 degrees F (200 degrees C) for 10-15 minutes  

      Greek Pasta Salad:

      1. Cook pasta per package directions until al dente 
      2. Combine pasta, cucumbers, cherry tomatoes, bell peppers, olives, and feta cheese in a large bowl 
      3. In a small bowl, make the vinaigrette. Whisk together olive oil, white wine or apple cider vinegar, dijon mustard, Italian or greek seasoning, maple syrup or honey 
      4. Pour vinaigrette on pasta salad and mix until combined. Season with salt and pepper to taste
