Pan Fried Zucchini Coins Recipe
Quick and easy zucchini recipe!
These Registered Dietitian approved pan fried zucchini coins recipe is the perfect side dish or appetizer for anytime of the year. The zucchini coins are pan-fried until golden, and are crispy, delicious, and easy make!
Makes 4 servings
What You Need
- 2 small zucchinis, cut into thin slices
- 1/4 tsp garlic powder
- 2 large eggs, beaten
- 1 cup dry bread crumbs (or more as needed)
- 4 tbsp all-purpose flour
- 2 tbsp oil
How to Make the Pan-Fried Zucchini Coins
- Place the beaten eggs, flour, and breadcrumbs mixed with garlic powder into three separate bowls
- Turn the zucchini slices in flour, dusting off any excess. Dip in the eggs, and then press the breadcrumbs into them to coat
- Heat oil in a skillet over medium heat, and pan-fry zucchini coins in batches until golden brown on each side, about 5 minutes.
