Tasty Pork & Veggie Stir-Fry Recipe

Try this tasty weekday supper meal recipe!

This is a speedy weekday supper meal that is loaded with great nutrition, making it perfect for busy evenings when you want a delicious balanced dish. It’s versatile and can be easily customized to suit your tastes or to help clear out the fridge. Serve it with rice or noodles for a satisfying meal, and add extra hot sauce if you prefer a spicier kick.

Feel free to experiment with different vegetables for added variety, or swap out the pork for chicken, beef, or tofu to suit your preferences. The best part is, it comes together in no time while still packing a punch of flavor and nutrition.”

Makes 4 Servings

What You Need:

  • 2 tsp. vegetable oil
  • 500g pork tenderloin or other lean boneless pork, sliced into thin strips
  • 4 garlic cloves, minced
  • 2 tbsp. ginger root, finely chopped
  • 1 onion, sliced
  • 2 red, yellow or orange peppers, sliced
  • 4 cups snow peas, sliced mushrooms, thinly sliced carrots or small pieces of broccoli
  • 1/2 cup reduced-sodium chicken broth
  • 2 tbsp. reduced-sodium soy sauce
  • 1 tbsp. cornstarch
  • 1/2 tsp. red hot chilli pepper sauce (optional)

How to Make the Pork & Vegetable Stir-Fry Recipe

  1. In a large skillet or wok, heat oil and stir-fry pork until no longer pink.
  2. Add garlic, ginger, onions, and veggies and stir-fry until slightly soft.
  3. In a separate bowl combine broth with cornstarch, soy sauce and hot sauce and then add to stir-fry pan.
  4. Stir constantly until sauce thickens and serve immediately over rice or noodles.
