Simple Breakfast Quesadillas
Easy & delicious breakfast quesadillas for those busy mornings!

Do you often skip making breakfast? Especially on busy work weeks? Breakfasts can be simplified to make your mornings run smoother and ensure you are getting a nutritious start to the day!
I find prepping ingredients the night before key to setting yourself up for success and will get you feeling excited about your morning routine. I love making these simple breakfast quesadillas for all of those reasons. They are packed with a variety of vitamins and minerals, high in protein, and packed into a crispy tortilla you’ll love.
Although I am not gluten intolerant, I found that using gluten-free tortillas made with rice flour gave the quesadillas an added crispiness and kept all of the ingredients together really well, I couldn’t get enough!
Serve with a dollop of sour cream and a dash of hot sauce if you prefer. I also love adding a bowl of fresh berries on the side for extra nutrients and sweetness. Enjoy!
Serves: 2

What You Need
- 1 tbsp salted butter
- 1/4 cup red onion, diced
- 1/2 cup red pepper, diced
- 3/4 cup cheese, shredded
- 1 cup spinach, chopped
- 4 eggs
- 2 gluten-free tortillas (used Western Family)
- Salt & pepper to taste



How to Make the Breakfast Quesadilla Recipe
- Whisk 4 eggs together in a small bowl, and set aside.
- In a medium pan over medium heat, add 1 tbsp of butter until melted. Then add in your prepped vegetables. Sauté for 5 minutes then add your whisked eggs. Cook until scrambled then place in a medium bowl and set aside.
- Add your tortilla to the pan and on one side add half of your scramble. Top with cheese and fold your tortilla over in half.
- Place the lid on the pan to help the cheese melt and the tortilla to crisp if needed, then flip and do the same on the other side, around 3 minutes. Repeat the same step for your second tortilla, remove from pan, let cool, then cut into desired shape. Enjoy!
