It is packed full of vegetables like peppery arugula, sweet tomatoes, colourful bell peppers, and grated zucchini. What You Need
Pesto Pasta Salad Recipe Ingredients
- 1 lb dry pasta
- ¾ cup basil pesto
- 1 jar roasted red bell pepper (about 1 cup)
- 3 cups arugula
- ½ cup bocconcini balls, cut in half
- 1 zucchini, grated
- 1 bell pepper, diced
- 2 tomatoes, diced
- ½ cup pumpkin seeds
- ½ cup fresh basil
Note: you can also add sundried tomatoes and olives if desired

- Cook pasta as per package instructions.
- In a large bowl add pasta and toss with pesto to coat.
- Prepare all other ingredients. To bowl add roasted red pepper, arugula, zucchini, bell pepper, tomato, bocconcini, pumpkin seeds, and fresh basil. Mix together well and serve as a side dish or add additional protein (like leftover roasted chicken or white kidney beans)
