It is packed full of vegetables like peppery arugula, sweet tomatoes, colourful bell peppers, and grated zucchini. To make it even better, there is added deliciousness from the bocconcini balls and it is topped with fresh basil. 

We also love that this recipe makes great leftovers to enjoy throughout the week for lunch or dinner. Feel free to double the recipe and serve alongside a protein such as chicken, turkey burgers, or beans!

What You Need 

Pesto Pasta Salad Recipe Ingredients

  • 1 lb dry pasta  
  • ¾ cup basil pesto 
  • 1 jar roasted red bell pepper (about 1 cup)  
  • 3 cups arugula 
  • ½ cup bocconcini balls, cut in half  
  • 1 zucchini, grated 
  • 1 bell pepper, diced 
  • 2 tomatoes, diced   
  • ½ cup pumpkin seeds  
  • ½ cup fresh basil  

Note: you can also add sundried tomatoes and olives if desired

How to Make the Pesto Pasta Salad Recipe:

  1. Cook pasta as per package instructions.
  2.  In a large bowl add pasta and toss with pesto to coat.  
  3. Prepare all other ingredients. To bowl add roasted red pepper, arugula, zucchini, bell pepper, tomato, bocconcini, pumpkin seeds, and fresh basil. Mix together well and serve as a side dish or add additional protein (like leftover roasted chicken or white kidney beans)
