Winter Quinoa Salad Recipe

Are you looking for a new winter salad recipe you can enjoy at home or meal prep for work lunches? This hearty and colourful winter quinoa salad recipe is simple to prepare and one of my favourite salad recipes to make and enjoy. It’s filled with quinoa to add a boost of protein, crunchy kale for greens and added vitamins and fibre, crispy prosciutto for saltiness, roasted butternut squash, and a Honeycrisp apple for added sweetness and texture. We hope you love this refreshing quinoa salad recipe as much as I do!

Quinoa is a great addition to any salad as it has a high-fibre content which helps to optimize digestion and lower cholesterol. It also contains 8 grams of protein per 1 cup and is a complete protein, meaning that it has all the essential amino acids our bodies can’t make on their own. It is also gluten-free and can be enjoyed in salads, as a side dish, or as a rice-substitute in stir-frys!

Quinoa Salad

What You Need

Salad Ingredients:

  • 1 cup quinoa
  • 1 small butternut squash
  • 1 honey crisp apple, diced
  • 2 cups kale, chopped
  • 6 slices of prosciutto

Dressing:

  • 4 tbsp olive oil
  • 1 tbsp white balsamic vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • Salt & pepper to taste

How to Make the Winter Quinoa Salad Recipe

  1. Preheat the oven to 350°F.
  2. Toss your cubed butternut squash with olive oil, salt & pepper, then place on a lined baking sheet and bake for 30 minutes. Set aside.
  3. Cook quinoa as per packaging, set aside.
  4. In a non-stick pan over medium-high heat, add your prosciutto until as crispy as you prefer, remove, and set aside.
  5. In a small bowl, combine olive oil, white balsamic vinegar, dijon mustard, honey & salt & pepper. Set aside.
  6. Add all the ingredients, quinoa, butternut squash, kale, and apple to a large bowl, add the dressing, then stir to combine & enjoy!
