Loaded Veggie & Hummus Wrap Recipe

These veggie wraps are perfect for a healthy snack you can bring on the road, for lunch or take camping. Loaded with ALL the veggies, creamy hummus and avocado, it will keep you feeling full for longer so you can do more of what you love. There are no exact amounts for the vegetable ingredients, but I love to cut up at least 1 full vegetable of each to have on hand, which makes these wraps come together quickly!

What You Need

Loaded Veggie and Hummus Wrap Ingredients

  • Whole-wheat wrap
  • Hummus
  • Avocado, sliced
  • Cucumber, sliced
  • Radish, sliced
  • Red pepper, sliced
  • Carrots, ribboned
  • 1 cup of Arugula tossed with 1/2 tbsp olive oil + 1/2 tsp balsamic vinegar + s & p
  • Pickled red onion
  • Optional: sprouts

How To Make the Veggie and Hummus Wrap Recipe:

  1. In a medium size bowl, toss the arugula with olive oil, balsamic vinegar, salt and pepper. Set aside. 
  2. Place your tortilla on a flat cutting board and smear a couple tablespoons of hummus on top. Add 4-5 slices of avocado, cucumber, radish, red pepper, carrots, arugula, and pickled red onion. Roll up tightly by folding in each side of the wrap and rolling until the bottom is secured. Enjoy!
