This oven roasted cabbage recipe is surprisingly simple and incredibly flavorful. If you haven’t roasted cabbage yet, you’re in for a treat—roasting brings out its natural sweetness and transforms it from a humble veggie into a tender, slightly caramelized side dish.

Cabbage is not only budget-friendly and versatile, but it’s also packed with nutrition. It’s a great source of fiber to support digestion, rich in vitamin C for immune health, and contains antioxidants that help fight inflammation. Plus, it’s naturally low in calories, making it an easy way to add volume and nutrients to any meal.

Serve roasted cabbage with grilled fish, chicken, meat, tofu, or legumes, alongside rice, quinoa, or potatoes for a simple, nourishing plate.

What You Need:

  • Purple or green cabbage
  • Olive oil
  • Garlic powder, salt and pepper to taste

How to Make the Oven Roasted Cabbage Recipe:

  1. Cut cabbage into slices but keep the core so strands stay attached.
  2. Spread out on a baking sheet in single layers.
  3. Brush with olive oil and sprinkle with garlic powder, salt and pepper to taste.
  4. Cover with tinfoil and bake for 15 minutes in the oven at 450F.
  5. Flip and continue roasting another 15 minutes until browned and charred in some areas.
