Chicken Marbella Recipe

Looking for a flavorful dish that’s both savory and sweet? This Chicken Marbella recipe brings together tender chicken thighs, tangy olives, briny capers, and the natural sweetness of prunes and dried figs for a perfect balance of flavors. Marinated overnight for maximum flavor and baked to golden perfection, this dish is a standout at any dinner table. Makes 6 to 8 servings 

What You Need

    • 12 skinless chicken thighs (bone-in or boneless)   
    • 2 tbsp olive oil  
    • 1/4 cup red wine vinegar  
    • 1 cup white wine or chicken broth  
    • 1/4 cup brown sugar  
    • 1 tbsp dried oregano  
    • 2 large bay leaves  
    • 4-6 cloves of garlic, minced  
    • 1/4 cup green olives  
    • 1/4 cup capers (including a splash of the juice)  
    • 1/2 cup of prunes and 1/2 cup of dried figs 
    • Salt and pepper to taste

How To Make

  1. Combine all ingredients and marinate the chicken overnight in the fridge – ideally turn the chicken pieces to coat with marinade.  
  2. Baked the chicken with the marinade at 350F for about 50 minutes until chicken is done and the sauce is a deep golden brown color. 
  3. Top with fresh diced parsley and serve over rice and enjoy with your favorite steamed veggies and/or a tossed salad.
