Chicken Marbella Recipe
When asked by my client California Dried Plums my favourite way to use prunes, I immediately thought of this recipe. So delicious, and easy too. Makes 4 -6 servings

What you need:
- 4 chicken breasts, or 12 chicken thighs
- 1 cup diced, pitted California prunes
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1/4 cup red wine vinegar
- 1 cup white wine
- 1/4 cup capers
- 1/4 cup brown sugar
- 1/4 cup pitted, sliced green olives
- 1 tbsp dried oregano
- 4 bay leaves
- salt and pepper
How to make:
- Cut chicken breasts into 3-4 pieces (or half, if using thighs). Mix garlic, olive oil, red wine vinegar, white wine, brown sugar, oregano, salt and pepper, add chicken pieces, olives, capers and prunes to marinate overnight in fridge
- Place chicken and marinade ingredients into oven safe dish, and bake at 350 for 45-60 minutes until done.
- Serve with fresh chopped parsley, and rice .
