This crumble topped French toast casserole is perfect for a special occasion

Overnight French Toast Casserole Recipe

When you need a show-stopping breakfast but don’t want to spend hours in the kitchen first thing in the morning, this overnight French toast casserole recipe with a delicious streusel topping is just what you need. I got this recipe from a great friend, Kerry Parker Smith, who I can always rely on for delicious recipe recommendations.

I like to serve this with a big fruit salad and some yogurt on the side.

Makes 12 small servings.

What You Need:

  • 1 loaf Challah, or 1 loaf Whole Wheat bread, Sliced
  • 8 eggs
  • 2 cups (500 mL) milk
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp butter (for greasing the baking dish)

For the crumble topping:

  • 1 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup chopped almonds
  • 1/4 cup brown sugar
  • 1/2 cup cold butter

How To Prepare the Overnight French Toast

  1. Grease a 9 x 13 Inch casserole dish with butter
  2. Slice the challah into 1 inch slices
  3. Arrange all but the end slices in two slightly overlapping rows in the prepared casserole dish.
  4. In a bowl, whisk together eggs, milk, sugar, vanilla and cinnamon.
  5. Pour evenly over the bread slices.
  6. Cover with plastic wrap and refrigerate overnight.
  7. In the morning, preheat the oven to 350F.
  8. Remove the casserole from the fridge and allow it to warm slightly while you prepare the topping.
  9. In a medium bowl, combine the oats, pecans, almonds and sugar. Grate the cold butter into the bowl and crumble it all together into pea-sized pieces using your fingers.
  10. Sprinkle the crumble topping evenly over the bread and egg mixture.
  11. Bake for 35 – 40 minutes until the bread is lightly browned and the eggy mixture is bubbling.
  12. Let it stand for about 10 minutes before serving.

*You can also freeze this recipe for a make ahead option but instead of baking fully, simply bake for half the time covered in tinfoil and then cool fully before placing in the freezer in an air tight bag.
