Hash Brown Egg Nest Recipe

A comforting brunch bake with minimal effort

This recipe comes courtesy of Andrea’s friend Lisa Gokstorp and is the perfect addition to any weekend brunch. Crispy, comforting, and easy to make, these hash brown egg nests shine alongside fresh fruit and a side of toast or scones. They’re also fantastic topped with sliced avocado for an extra touch of richness.

Makes 8 servings

What You Need

  • 15 oz. frozen shredded hash browns, thawed
  • 1 cup Cheddar cheese, shredded
  • 1 tablespoon olive oil
  • 8 eggs
  • Salt and pepper to taste
  • 3 oz of deli ham, diced
  • 1 tablespoon Cheddar cheese, shredded
  • 1 tablespoon of chives, chopped

How to Make the Hash Brown Egg Nests

  1. Mix hash browns, salt, pepper, olive oil and 1 cup Cheddar cheese in a mixing bowl
  2. Grease a muffin pan and divide hash brown mixture. Use your fingers to pack them tightly and shape them into nests – push them down firmly
  3. Bake at 425 degrees F or until the edges have browned and the cheese has melted, about 15 minutes
  4. Beat the eggs, ham, and chives together, and pour equal amounts into each nest, season with salt and pepper to taste
  5. Bake at 350 degrees F until the egg mixture sets, about 13 to 16 minutes
  6. Let it cool, gently slide a knife along the edges and lift out of the pan
