Creamy Raspberry Vanilla Oatmeal
Easy & creamy raspberry vanilla oatmeal to start your day off right
Are you an oatmeal or porridge lover? If so, this recipe is a fun take on the traditional porridge or oatmeal we grew up on! It all comes together in one pot after blending the berries, milk, water, and vanilla extract until smooth. The addition of the milk creates a delicious creamy texture to the oatmeal and the raspberries create a lovely pink colour along with added nutrients. This is one of my go-to oatmeal recipes and I hope you enjoy it too!
Another reason I love oats is that they are so versatile and packed full of soluble fibre called beta-glucan. Beta-glucan has been shown to improve cardiovascular health by lowering cholesterol as well as in diabetes management to lower the glycemic index, improves satiety to make you feel full for longer, and gut health by boosting immunity.
Top with fresh raspberries, bananas, white chia powder, almond butter, and extra milk if desired!
Serves: 4

What You Need
- 1 1/2 cups rolled oats
- 1 tsp pure vanilla extract
- 1 cup, fresh raspberries
- 1 cup milk
- 1 cup water
- 1 tbsp white chia powder
- Optional: top with fresh raspberries, bananas, white chia powder, almond butter, and extra milk if desired!



How to Make the Creamy Raspberry Vanilla Oats Recipe:
- In a medium saucepan over low-medium heat, add oats and chia powder.
- In a blender, combine the raspberries, milk, water, and vanilla extract until smooth.
- Pour this mixture in with the oats, stir, and let simmer on low heat for around 10 minutes, or until thickened and creamy.
- Remove from heat and serve. Enjoy!
Note: this recipe can also be made ahead of time by placing individual portions in separate bowls then in the fridge, so you can take them out easily for busy mornings. Just reheat in the microwave or stove top with some added water or milk to bring back the moisture!
