Spinach Pomegranate Salad Recipe

This colourful spinach and pomegranate salad is packed with phytochemicals that support heart health, eye health, and cancer prevention. Serve it as a vibrant side dish, or add grilled chicken and a slice of whole-grain garlic toast to turn it into a satisfying main course.

Makes 4 small side salads

What You Need

Salad:

6 cups or more washed fresh spinach leaves
Seeds from one pomegranate
1 tbsp. Toasted pine nuts

Dressing:

2 tbsp. olive oil
2 tbsp. red wine vinegar
1 tsp. maple syrup
1/2 tsp. dry mustard or Dijon mustard
1/2 tsp. oregano leaves
Salt and pepper to taste

How to Make the Spinach Pomegranate Salad

  1. In a small bowl/jar combine dressing ingredients and mix.
  2. In a large bowl place the spinach and drizzle with dressing and toss the salad.
  3. Top with pomegranate seeds and pine nuts.
