Pumpkin spice flavours are everywhere this time of year. From cereal to lattes at the coffee shop, to a seasoning added to cinnamon buns.

But why not use pumpkin puree in your recipes? You can easily make your own from pumpkins grown in your yard or just pick them up at the store or farmers’ market. It’s also usually found at a great price around Thanksgiving. Beyond just the pumpkin spice flavours, pumpkin puree adds colour and texture to your food, and it’s delicious too!

These whole-wheat pumpkin chocolate chip cookies are a big hit with both kids and adults! They work great made ahead and frozen for snacks on-the-go and as a healthier dessert option as they are made with whole wheat flour, oatmeal, and pumpkin.

Pumpkin apple custard recipe

What tastes more like fall than pumpkin, apples, and spices? This quick-to-put-together pumpkin apple custard recipe is delicious warm, or cold. Top with whipped cream, or granola, or just eat plain. It’s also a fantastic dairy-free addition to a fall or winter meal. Its texture is similar to a pie, with the apples acting like a crust on the bottom. Enjoy!

Starting your day off with a warm bowl of oatmeal not only tastes fantastic but will boost your fibre intake and protect against heart disease.  Here is a hearty variation with added pumpkin to boost your beta carotene intake.

These pumpkin pancakes are so delicious and simple to make. Simply add 1/2 cup of pumpkin puree and warming fall spices to your basic pancake recipe base. These also have a lovely orange shade to them and are incredibly delicious with real maple syrup and toasted pecans. Enjoy!

7. Pumpkin Seeds

Shelled Pumpkin Seeds

One of my favorite things is shelled pumpkin seeds, not only for myself but for my boys as well! As the school year goes on and my kids are getting tired of the usual lunch options, it’s great to provide them with a different source of protein that’s easy, healthy, and tasty (especially since nuts are not allowed at school). Pumpkin seeds work well in the “Bento-box” style lunch.

In addition, pumpkin seeds can be added to oatmeal, cereal, muffins, salads, yogurt, trail mix, or eaten solo. Just like nuts, 1/4 cup of pumpkin seeds is considered a serving. They are not only a source of protein but high in healthy fats, fibre, iron, magnesium, and potassium.

I no longer wait for Halloween anymore, pumpkin seeds are readily available all year at any grocery store!
